Our chef Riccardo Bioni
Second-generation chef and restaurateur, he has made the restaurant his home and cuisine his greatest passion. His philosophy is based on the use of excellent raw ingredients and impeccable presentation of the dishes. He skilfully combines culinary secrets, from ancient to modern, to create fusions with a unique taste.
He has enriched his wealth of experience around the world, from Russia to Switzerland, from Ukraine to Spain. His curiosity and passion for cuisine lead him to stay constantly up to date and to learn new skills and techniques: chocolaterie, molecular cuisine, and gluten free.
